Ingredients

1 lobster
½ onion
1 boiled egg yolk
1 carrot
1 stalk of celery
Basil leaves
Parsley
Salt
Extra virgin olive oil

How you make it

  1. Peel carrots and chop into small pieces, add to pan of boiling water. Chop celery and onion, then add to saucepan, with a little bit of parsley and basil
  2. Place a piece of paper under the lobster, chop in half and break the pincers. Sprinkle with salt
  3. Put the egg yolk into container, add salt, extra virgin olive oil, basil and parsley. Scoop green interior from lobster into the mixture
  4. Place lobster into bamboo steamer and cover. Place on top of boiling water and leave to cook, this shouldn’t take any longer than 6 minutes
  5. Blend sauce mixture with a blender
  6. Once lobster is cooked, arrange on the plate, spread sauce over the top and enjoy!
