Ingredients

250 gr clams
1 1/2 head broccoli
100 gr artisan spaghetti
1 clove garlic
Parsley
1 pinch red hot chili pepper
Salt
Extra virgin olive oil

How you make it

  1. To begin with, make the broccoli sauce by chopping the broccoli into small pieces and put in a pan of boiling water, cook for a few minutes until tender
  2. Once done, drain the broccoli and put in a bowl of cold water
  3. Drain into a small jug with a little bit of cold water and mix with the blender. If the mixture is too dry, and a little more water and some extra virgin olive oil
  4. Put some extra virgin olive oil in a saucepan on the heat, add garlic and chilli pepper
  5. Once the oil is hot enough, tip in the clams and cover
  6. Add some water (or you can use white wine) and re-cover. In less than one minute they will open up
  7. Sprinkle chopped parsley over clams
  8. Cook the spaghetti and mix with the clams, cook for a minute to let the pasta absorb the water from the clams
  9. Either mix the sauce in with your spaghetti, or use it as decoration when plating up
