100g squid
100g clams
100g grouper
100g monkfish
100g tuna
100g swordfish
100g cod
1 garlic clove
150g cherry tomatoes
1 teaspoon dried oregano
1 pinch red hot chili pepper
½ head broccoli
½ artichoke
½ carrot
½ corn
½ pepper
½ spring onion
½ red onion
1 pinch watercress
Salt
Extra virgin olive oil

How you make it

  1. Begin by slicing the fish into smaller pieces and season with salt and extra virgin olive oil
  2. Place fish into a hot pan, turning to make sure both sides cook evenly
  3. Heat a saucepan of water, add a little bit of salt and once it is boiling, cook the vegetables for a couple of minutes.
  4. Dry the vegetables and put in a bowl of cold water, to maintain the colours and crunchiness. Just before serving, remove from the water and dry
  5. Arrange vegetables and fish on plate, garnish with olive oil, watercress and seasoning – your sea garden is now ready!
